Huckleberry Enstrom Cookies
- 17.5 oz sugar cookie mix
- 1/2 cup butter (softened)
- 3/4 cup drained Huckleberries
- 1/4 cup Huckleberry juice
- 4 teaspoons of Pecans and Almonds (chopped)
- 2 1/2 teaspoons of Enstrom Cream Caramels (chopped)
- 6 teaspoons of Enstrom Traditional Almond Toffee (chopped)
Preheat oven to 350 degrees and prepare cookie sheet.
Take 1/2 of the sugar cookie mix and stir in chopped nuts and Enstrom candies.
With the other 1/2 of the sugar cookie mix, combine with softened butter until you’ve reached a creamed consistency.
Add Huckleberries to the butter mixture and stir well.
Slowly add in flour and chopped candy mixture until combined.
Add Huckleberry juice and stir well.
Use a tablespoon to measure out cookies, roll into ball and place 2 inches apart on the cookie sheet.
Bake for 25-30 minutes or until golden brown.
Optional Drizzle:
Ingredients:
1/2 cup of Huckleberry juice
1/3 cup of sugar
Mix juice and sugar well
Cook on stovetop over medium-low heat until thickened (about 15-20 minutes)
Drizzle Huckleberry syrup over the cookies if desired.
